scrambled eggs

I love scarmbled eggs that are still slightly runny. I know traditional ones have small curds, but I kind of like big, silky curds.

These were really great scrambled eggs. I added some chopped green onions, and undercooked them slightly. Set on a piece of salami and english muffin, this makes a nice little dinner, I mean breakfast, sandwich. Another fried tomato makes an appearance. These were last of my mom's garden bounty.

egg muffin

This is a much fancier version of the classic egg muffin sandwich.

This was excellent. We actually had it for lunch, but I suppose it's more of a breakfast-type sandwich. Unfortunately, I can't remember what type of cheese that is.

A slight embellishment on yesterday's sandwich

After yesterday's sandwich, I decided that a warmed version would be equally tasty. I pressed the ingredients (with the addition of balsamic vinegar and olive oil) and grilled it.

simple

Sometimes a simple sandwich is all you need.

We had some olive bread, arugula and salami, plus some yellow tomatoes, so I decided that the quickest lunch would be an open-face sandwich. Simple and tasty.

open-faced

I'm not sure where I got this idea from, but it seemed like a good idea at the time.

Overall, it was a bit on the salty side, but good with the blander greens. I basically pan-fried the polenta with parmesan cheese, so the cheese made a nice crisp crust under the polenta. And then laid a piece of piave and proscuitto on top.

panini

D's mother had given me some red peppers, and I had grilled and marinated them a few days ago. Since we had some nice goat cheese around anyway, and also a great loaf of rosemary bread sitting around, I decided that a roasted red pepper panini was in order.

This was a yummy sandwich. The fog lights cheese was a nice foil for the peppers.

grilled cheese night

Sometimes you just get a craving for some basic grilled cheese.

tuna sandwich

We have an inordinate fondness for tuna sandwiches. I'll have to say that brand does make a difference, though. I had gotten used to Trader Joe's chunk tuna, and this is a can of Bumblebee that we picked up. It's much waterier, and not as flavorful.

Since we had English muffins, we used those as the base. As usual, egg, cheese, and tomatoes go on top. Our tuna mix is canned tuna, mayonnaise, cayenne pepper, grilled onions.
